creamy macadamia dressing

I whipped up another interesting salad dressing/marinade this morning, using macadamia nuts (which I have never really used in recipes before). They are such a delicious and creamy nut, that I thought they would make a perfect base for a creamy salad dressing. Also, I have been wanting to make kale chips after my visit to Raw Aura (see post: i heart raw aura) and thought that this might also work as a marinade. Here is the recipe I experimented with:



1 cup macadamia nuts
1/4 cup water
1/4 cup hemp seeds
1/2 cup lime juice
1/2 lemon, juiced
1/4 avocado
1 tbsp apple cider vinegar
1 tsp Himalayan sea salt (pink)
2 dates
additional 1/4 cup water or more if needed


Blend ingredients in a blender, adding in additional 1/4 cup water as you go along.

All in all, I found the dressing quite delicious, although be forewarned: this would be best suited for those with an affinity for sour tastes, as opposed to sweet.

For a more sweeter version, you could substitute some of the lime/lemon juice with a tablespoon of agave or more dates. Personally, if making this recipe again, I would experiment with the quantities of the 'sour' ingredients (lime juice, lemon juice, apple cider vinegar), perhaps reducing the lime juice to 2 tbsp etc.

I find the best thing about raw vegan salad dressings is that you can keep experimenting with different ingredients and quantities to suit your own personal preference. Try it for yourself :-) I will definitely keep you posted on the pending kale chips!

Thanks for the comment! I find the flavour is pretty potent, so if you like sour tastes, then this is a great recipe for you :-) If not, just adjust the 'sour' flavours/ingredients to your liking. I've been using it as a spread in raw vegan sushi nori roll wraps - yum :-)
